Chef Edgar Rico and Sara Mardanbigi opened Nixta on East 12th Street with a proposition that sounds simple and is anything but: make everything from heirloom corn that arrives whole, roast it the day before service, grind it fresh each morning, press the masa by hand, and cook every taco to order on a comal that has been seasoning for years. The Michelin Guide gave it a Bib Gourmand for good quality at good value. It also awarded Nixta a Green Star for sustainable gastronomy — one of four such stars in the entire Texas guide. The tortillas alone justify the trip.
