The Room
Lou's opened on Burnet Road in 2021 — McGuire Moorman's argument that the American diner-counter is the country's least-honest dining-room form when run badly and one of the most-honest when run with discipline. The room is built to the 1950s diner-counter language: red-leather stools, chrome trim, a long counter, a tin ceiling. The neon sign outside reads 'Lou's' in cursive and is the most-photographed sign on Burnet Road.
The room is intentionally non-reservation. McGuire and Moorman's working argument is that the diner-counter form requires walk-in service to be honest. The line forms by 11:30 most days and clears by 9. The dining room is small — twenty-two stools at the counter, twelve seats at the four booths — and turnover is the discipline that keeps the room available.
The Food
The Lou's burger — house-ground beef, American cheese, butter-toasted brioche, special sauce — is the menu's calling card. The blue-plate specials rotate daily: meatloaf on Tuesdays, fried chicken on Wednesdays, pot roast on Thursdays. The patty melt and the BLT carry the lunch end. The salads are the daytime alternative for the diner who is not committing to the burger.
The cocktail bench is short and unironically classic — a working Manhattan, a properly shaken Sidecar, a Negroni, a Tom Collins. The wine programme is unusual for the format: small-producer, low-intervention, weighted toward the Loire and Italy, with an honest by-the-glass programme. Beer runs Texas craft. Service is counter-only, warm and quick, in the McGuire Moorman house book.
