Aaron Franklin opened Franklin Barbecue in 2009 from a trailer on East 11th Street with a simple proposition: USDA Prime brisket cooked over post oak for 12-16 hours, served until sold out. Texas Monthly called it the best barbecue in the known universe. The James Beard Foundation gave Franklin their Outstanding Chef award. The New Yorker published a 10,000-word profile. Franklin has since moved into a purpose-built structure on East 11th Street — a two-story building with a covered outdoor patio, a bar, and a prep kitchen visible through glass. The brisket remains the centrepiece: fat cap intact, bark formed from the rendering of the Prime grade exterior fat against post oak smoke over sixteen hours, the interior a deep pink smoke ring with a texture that the food world has spent a decade trying to replicate.
