About The White Room

The White Room sits inside the Anantara Grand Hotel Krasnapolsky on Dam Square, in a gilded dining room that opened with the hotel's grand salon in 1885. The restaurant itself opened in 2016 as The White Room by Jacob Jan Boerma — the chef who held three Michelin stars at De Leest in Vaassen — and has held one Michelin star since 2018. Day-to-day the kitchen is run by chef de cuisine Tristan de Boer, in charge since 2021.

The Kitchen

Tristan de Boer cooks a precise, multicultural tasting-menu style, weaving Thai, Japanese, Indonesian and Surinamese flavour through classical French technique. There is no à la carte: the choice is between two seven-course menus, Gold (meat and seafood) and Green (vegetarian), priced around €185 a head before wine.

The cooking is detailed without being fussy, built on strong stocks, sharp acidity and a confident use of spice that sets it apart from Amsterdam's other starred rooms. A paired wine flight pushes the bill higher, but the kitchen's consistency is the reason the star has held for years.

The Room

The room is the draw as much as the plate: soaring ceilings, ornate plasterwork and chandeliers from the 1885 Winter Garden, dressed back to a calm, contemporary white. Tables are generously spaced, the light is low and flattering, and the sound level stays at a hush that suits a long tasting menu. Service is formal but warm.

Dress is smart — jacket territory for men, though not strictly enforced. It is one of the few Amsterdam dining rooms that feels genuinely grand without tipping into stuffiness.

Best for an Anniversary

Book The White Room for an anniversary when you want occasion built into the architecture: a Michelin-starred seven-course menu, a 19th-century hall under chandeliers, and service that paces the night for you. At around €185 a head it is a genuine splurge, so it reads as a milestone rather than a midweek dinner. It works equally well to impress clients or to close a deal over a quiet, serious meal.

Not for

Not for a casual or spontaneous dinner, a quick bite, or anyone who wants to order à la carte — it is tasting-menu only, formal, and priced as a special occasion.
