La Capitale sits on the lobby level of the Four Seasons Amman — the city's senior diplomatic hotel — in a panelled dining room with an open kitchen and a fixed menu that rotates seasonally. The cooking is unapologetically classical French: Dover sole, beef Wellington, soufflé Grand Marnier, the expected roster executed with hotel-level precision. This is not the room to go to for culinary surprise; this is the room to go to when the surprise would be inappropriate.

The wine list is the best in Jordan — a three-hundred-bottle Bordeaux-and-Burgundy anchored programme with a growing Lebanese and Jordanian section (the Tell winery's Chateau Amale reds have started to appear on serious short-lists). The sommelier is the city's most senior and works fluently in English, French, and Arabic.
