The Verdict

COYA Abu Dhabi occupies a floor of the Four Seasons Hotel on Al Maryah Island, opposite Zuma at The Galleria. The dining room is a tropical-colonial fever dream: painted columns, mosaic panels, green foliage, Peruvian textiles, and floor-to-ceiling windows opening onto the island's promenade. The Pisco Bar & Lounge — separate from the main dining room — is where the night typically begins or extends; the music program, including resident DJs and a rolling rota of international guests, is a core part of the identity.

The kitchen runs the COYA formula — a modern, upscaled interpretation of Peruvian cuisine with its Spanish, Chinese (chifa), and Japanese (nikkei) influences made explicit. The ceviche program is the core draw: sea bass with cancha and Peruvian corn, a tiradito of salmon with yuzu and chili, and a rotating selection of the day's catch. The anticuchos (skewered grilled meats) are the signature of the robata section, and the suckling lamb shoulder — a 24-hour cook — is the dish the room has built a local following around.

Expect AED 450–650 per person with cocktails; the tasting menu is AED 650. The Pisco Sour program alone justifies the trip — the passion fruit version is the city's best — and the wine list emphasises New World and Spanish labels aligned to the kitchen. The terrace, weather-permitting October to April, is the most desirable seat. Reservations open at 7pm; by 10:30pm on Thursday and Friday the room is full and loud.

COYA is the room in Abu Dhabi that signals celebration without requiring anyone to dress it up. The energy builds through the meal — ceviche cart, live music, DJ set — which makes it better for groups of four to eight than intimate dinners for two. The Pisco Bar & Lounge is where Abu Dhabi's professional class closes out the week on Thursday nights.
