Methodology
We assess every mountain restaurant on this list against six structural variables: mountain setting (top of mountain, on-piste cabin, ski-village hotel, valley village), ski access (ski-in / ski-out, gondola access, off-mountain), signature dish, Alpine program (modern French Alpine, traditional fondue and raclette, Tyrolean Austrian, Northern Italian Aosta-Valley, Hokkaido modern Japanese), seasonal calendar (winter ski season, summer hiking season, year-round), and the chef training lineage.
Eleven of our top fifty rooms hold Michelin stars (three at three-Michelin level, eight at two-Michelin, three at one-Michelin). The on-mountain cabin cluster (Chez Vrony, Cabane Mont-Fort, Le 3842, Adlerhitta, Hahnenkammstuberl, Jakobshorn Jatzhutte, Schatzalp) is treated as a separate institutional tradition; these are the institutional ski-lunch venues, not dinner destinations. The Aspen, Vail, Telluride, Sun Valley, and Breckenridge North American Rockies clusters are treated as parallel American mountain-resort traditions to the French Alps and Swiss Alps.
