A protocol beats a promise

"Gluten-free friendly" on a review aggregator means almost nothing at this level. What separates the serious kitchens is procedure: when they want to know, what exactly they ask, and whether the replacement course is composed or merely subtracted. SingleThread, Healdsburg

Kyle Connaughton writes the night's ten courses around a questionnaire every guest completes at booking, which makes SingleThread in Healdsburg the rare three-star where a restriction joins the menu's design instead of interrupting it. The $425 kaiseki-inspired dinner draws on Katina Connaughton's farm outside town, and a gluten-free sequence here is composed from the ground up, not stripped of its sauces. Alinea, Chicago

Grant Achatz lost his palate to tongue cancer in 2007 and retrained it from zero, and his Lincoln Park kitchen treats a dietary constraint the way it treats gravity: as a design problem. Give Alinea 48 hours and the Gallery menu, $290 to $355 on Tock's ticket system, is re-engineered course by course; celiac diners report scratch-built substitutes up through the dessert work, gluten-free cakes included. Michelin trimmed Alinea to two stars in November 2025 after fourteen years at three; the protocol did not blink. The Inn at Little Washington, Washington, Virginia

Patrick O'Connell's team calls before the meal with the question that defines this list: casual gluten-free, or celiac. The answer changes the prep path for the $388 menu, and diners with celiac describe each course arriving flagged and adjusted, gluten-free bread baked fresh, even gluten-free tea sandwiches at the inn's afternoon tea. The former garage 67 miles west of Washington DC held three stars from Michelin's first capital guide in 2019 until November 2025, when the ceremony trimmed it to two; the protocol predates the stars and will outlast them. One caveat the inn itself would endorse: it is not a dedicated gluten-free facility, so the most sensitive guests should ask about cross-contact when that call comes.

L'Enclume, Cartmel

Simon Rogan farms a plot outside the village, and a menu built on vegetables, lake fish and aged local meat starts further from flour than most. The £275 Experience menu at L'Enclume in Cartmel carries three stars in the 2026 Michelin Guide UK; dietary requirements are catered for with advance notice and refused on the day, a hard rule worth respecting rather than testing. Note the restriction when you book, reconfirm by email a week out, and budget for the 10% discretionary service charge. The Lake District's best kitchen handles the rest without ceremony.

Eleven Madison Park, New York

The counterintuitive entry. Daniel Humm's menu went plant-based in 2021, and in 2022 it became the first fully plant-based menu to hold three Michelin stars; plant-based cooking leans harder on wheat and seitan than meat cookery ever did. Eleven Madison Park earns its place because the kitchen rewrites the $365 tasting per table when restrictions arrive with the Resy booking, and since October 14, 2025 the menu has offered select animal courses, a honey-lavender-glazed duck among them, which widens the gluten-free room to manoeuvre. State celiac explicitly; "vegan and gluten-free" is a different brief and the kitchen treats it as one.

Quintonil, Mexico City

A cuisine founded on corn rather than wheat is the friendliest terrain in fine dining for a celiac, and Jorge Vallejo's Polanco dining room proves it nightly. The eleven-course tasting at Quintonil runs MX$4,500, about US$260, with masa, nixtamal and chile doing the structural work that flour does elsewhere; the kitchen adapts the remaining courses per table when you note the restriction at booking. Two Michelin stars and No.3 on the World's 50 Best 2025 list make it the highest-ranked room on this page. An honourable mention for San Francisco: Dominique Crenn's Atelier Crenn in Cow Hollow is a three-star that publishes a dedicated dietary-restrictions page on its own website, and the pescatarian menu carries a vegetable-forward alternative for guests who need it. The same rule applies there as everywhere on this list: restrictions travel with the booking, never with the arrival.

Where the answer is no

Sukiyabashi Jiro Roppongi is the honest counterexample. Takashi Ono's two-star counter lists a ¥29,040 fifteen-piece lunch, asks for allergies at booking, and changes nothing: the sequence is fixed, and guests who cannot eat what the sequence serves are asked, politely, not to come. It is a category error to bring a celiac brief to a counter whose entire repertoire depends on the one thing you cannot eat.
