Hideki Endo's 12-seat omakase counter at 99 Sushi Bar — Madrid-Michelin-starred group, Dubai outpost on the lobby level of the Address Boulevard in Downtown, the Burj Khalifa filling the window. AED 850 a head for the omakase. For a proposal this is the unusual play: side-by-side counter seating means you propose between the otoro nigiri and the akami — Endo passes the ring across the counter himself, the gesture is genuinely Edo-period elegant. Rahul Rana's sixteen-course vegetarian tasting at avatāra inside the Voco Bonnington in JLT — the only Michelin-starred all-vegetarian Indian kitchen in the Gulf, AED 595 a head. For a Hindu or Jain proposal — a vegetarian partner, a couple with traditional Indian dietary observance, a Hindu wedding-tradition-aware engagement — avatāra is the obvious choice. The chef's table is the proposal seat: brief Rana at booking, choose a course (the kulcha or the avocado chaat work well) for the ring placement, and the kitchen plates it within the menu's rasa structure.
