Restaurant Zén is one of the world's most ambitious dining propositions, and almost certainly its most architecturally unconventional. Three Michelin stars are housed across three floors of a pre-war shophouse on Bukit Pasoh Road in Singapore's Tanjong Pagar district — a street of colonial terraces and boutique hotels. The experience unfolds across the building: aperitifs and snacks on the ground floor, the tasting menu on the second floor's main dining room, and petit fours with tea or whisky on the third floor's intimate lounge. The building itself is the narrative.

Swedish chef Bjorn Frantzén — who also holds three Michelin stars at his eponymous restaurant in Stockholm and at FZN in Dubai, making him the only chef simultaneously running three three-starred establishments — opened Zén in 2017 in the space formerly occupied by the legendary Restaurant André. The Singapore kitchen operates under its own executive chefs, but the philosophy is pure Frantzén: Nordic restraint applied to Japanese seasonal principles with French technique as the connective tissue. The result is a cuisine that feels simultaneously northern European and deeply Singaporean in its attentiveness to the market and to regional flavour.

Dinner runs to approximately S$580++ per person and lasts around four hours. The fixed menu changes seasonally and with the kitchen's curiosity. Guests receive a small printed menu at the end of the evening as a keepsake — a detail that speaks to the restaurant's understanding of what a meal at this level should feel like. Lunch menus are available from S$395++ and represent a slightly more focused version of the evening programme.

Zén received its third Michelin star in 2021 — an accelerated ascent by any standard — and has appeared in Asia's 50 Best Restaurants list consistently since. For those who value absolute novelty alongside absolute quality, it edges ahead of both Odette and Les Amis in terms of sheer originality.
