The sixth floor of the IMLAUER Hotel Pitter — a four-star superior property on the Rainerstraße, a short walk from the main station — provides the clearest unobstructed view of Hohensalzburg fortress available from any restaurant in the city. Since opening in 2014, the Sky Bar and Restaurant has drawn locals and visitors in roughly equal measure, which is the reliable sign of a rooftop that has moved beyond novelty. The view remains the primary argument, but the kitchen has developed its own conviction over the years and deserves to be taken seriously.

The menu operates at the intersection of Austrian tradition and contemporary international cooking. Wiener Schnitzel appears and is properly executed — the schmaltz-fried standard, not a shortcut version. But the kitchen's more interesting work happens elsewhere: in the beef tartare seasoned with precision and served with enough textural contrast to make it more than an assemblage, in the risotto with Amalfi lemon that arrives with appropriate acidity and body, and in the duck breast with apple brioche that manages to make a classic combination feel considered rather than automatic. The white chocolate with blood oranges at dessert is the kitchen showing restraint to good effect.

The terrace operates from late spring through early autumn and represents the best outdoor rooftop dining in the city. The interior is designed for year-round use, with full-height windows ensuring the view is never lost regardless of season. A bar programme handles pre-dinner drinks with equal competence — the Aperol situation in this city is predictable, but the Sky's cocktail list moves past it into something more interesting. Book two weeks in advance for terrace tables during the Salzburg Festival period: they disappear the moment the season opens.

Best Occasion Fit

Birthdays at the IMLAUER Sky work because the setting provides theatre without requiring the occasion to provide it. A group arrives, the city is spread below, the drinks are good, and the evening organises itself around a location that makes every photograph worth keeping. For a first date, the rooftop format is inherently activating — there is always something to look at, to point out, to discuss. The Sky gives first-date conversations a direction. For team dinners where the group wants to feel rewarded rather than merely fed, the combination of view and accessible menu pitch is reliable and well-priced for what it delivers.

What to Order

Begin at the bar: the Sky's Salzburg Sour — a riff on the classic with local apricot brandy — is the correct aperitif and sets the appropriate tone. For starters, the beef tartare is the benchmark dish and should be ordered. The schnitzel is worth having as a main if Austrian tradition is what the evening calls for; for something more animated, the duck breast handles the season's best apples and brioche in a combination that stays in memory. The Nockerl here is produced with confidence — order it at the start of the meal, give it the twenty minutes it requires, and the dessert will reward the patience.
