Boucan is the cacao-infused dining room of Hotel Chocolat — a luxury boutique hotel built on the original Hotel Chocolat cacao plantation in Soufrière, owned by the British Hotel-Chocolat-Group — and is one of the most distinctive contemporary Caribbean dining concepts. The restaurant runs a cacao-infused menu with a spectacular view of the Pitons.
The cuisine is cacao-infused contemporary Caribbean. The five-course cacao tasting rotates seasonally; signatures include a cacao-cured Caribbean tuna tartare; a slow-cooked Caribbean lamb shoulder with cacao-and-West-Indian-spice rub; a Caribbean-lobster bisque with chocolate-rum reduction; a wood-fired Caribbean snapper with cacao-pepper crust; the famous 'single-origin Saint-Lucian cacao tasting' for the dessert course (a deliberately educational programme that walks the diner through the regional cacao-bean tasting).
The wine list runs to 250 references with French Champagne and Burgundy coverage. The cocktail bar runs a serious cacao-cocktail programme.
The dining room and Pitons-view terrace together hold seventy-two covers. Service is hotel-grade.
