Chembe Eagles Nest sits on a rocky promontory above Chembe fishing village, its dining terrace cantilevered over a hillside that drops to the most extraordinary freshwater lake in Africa. The view — Lake Malawi stretching south to the horizon, dhows visible from five kilometres, the warm colours of the water shifting through the day — is the most beautiful in the region.
The kitchen combines Malawian lake ingredients with international technique, producing dishes that respect the extraordinary raw material. Chambo (the endemic tilapia of Lake Malawi) is the centrepiece — baked in herbs from the lodge garden, grilled simply with lemon, or slow-cooked in a light tomato sauce. The quality of the fish requires almost nothing from the cook.
Breakfast here, as the mist burns off the lake and the first fishing dhows appear on the water, is among Malawi's most memorable meals. Fresh lake fish, scrambled eggs, fruit from the lodge garden, and filtered coffee from Thyolo Estate.
